BlueCity asks chefs from restaurants in Rotterdam to join Het Nieuwe Nassen: a program in which practical tools are provided to make their menu sustainable, healthy and future-proof. Under the guidance of Greendish, we measure how things stand in terms of sustainability and health and we take care of one dish. A second group of entrepreneurs started in May 2022. In this interview with Marco Bunk of Wilskracht Bar & Keuken about how Het Nieuwe Nassen turned out for them.
