BlueCity asks entrepreneurs from the Rotterdam catering and food retail sector to join Het Nieuwe Nassen: a local movement of Rotterdam restaurants, food entrepreneurs, nature-inclusive farmers and trade organizations that together put the food transition on the map. Het Nieuwe Nassen offers catering entrepreneurs practical tools to get started on sustainability immediately. Together we dive into the world of plant-based food, local products, circular opportunities and waste-free cooking. Current trends that you as an entrepreneur can use to make your business future-proof. This can be done in various ways. One of these is by participating in the 'Get started with a dish challenge'. Eighteen Rotterdam restaurants already participated in this challenge and transformed a dish from their menu into a more sustainable, healthier Het Nieuwe Nassen variant. In this interview we speak with Leonie Staat, Operations Manager of the Euromast. She tells us about her participation in this Het Nieuwe Nassen Challenge.
