Each Expedition includes a visit to one of the BlueCity entrepreneurs, and during this lunch special, we’ll meet Sean Patrick from Gabanna Foodworks.

Sean has made impressive strides within BlueCity over the years: he first entered through a Circular Challenge and grew from the Fresh Ventures venture program into his own production space in the BlueCity FoodHub. There, the circular entrepreneur experiments with various local grains such as quintus wheat and oberkulmer spelt to make multi-grain pasta. In doing so, Sean offers local farmers more uses for nature-inclusive crops that enrich rather than deplete the soil.

After participating in BlueCity’s Circular Ideation Lab program (which will continue this year in the Start Up Studio) last summer, Sean has also been working on producing pasta from bread surplus. The entrepreneur developed a process at the BlueCity Lab to convert excess bread from local bakeries into a nutrient-rich ingredient through fermentation. It may be clear: Sean is the right man to visit when it comes to circular entrepreneurship and launching new projects.
